Vegetable rice-One pot meal-Simple Pulav recipe

Vegetable riceVegetable rice is my favorite. India has different kind of vegetable rice recipe and each called by different names from simple rice to flavorful briyani. Here is a simple one pot version that I make often. It is consumed by my family either as lunch box meal or as night dinner.

I was introduced to vegetable rice by my aunt. I hail from humble brahmin background, where garlic and some of the masala items are forbidden in the kitchen. Whereas my aunt lived in many parts of India and is a master cook. She makes dishes so nice that my cousins eat any left over curry or vegetables as snack. She can recreate any dish from Bengali cuisine to Kerala cuisine with simple acceptable ingredients to match our taste.

On the sides of the vegetable rice, want to share something about my aunt. She is a gold medalist in Physics from famous SRC college of Trichy. I am talking about a story 45 years back, where it was not an easy thing for getting that quality education. It is not the degree, but her interest in Physics that inspires me. Today I do not think, I cannot compare my passion on computer science (which is my major and career) to that of my aunt. She inspires me by the perfection in anything she does and her clarity of thinking.

Here is a simple, easy, tasty vegetable rice loaded with none other than vegetables.

Ingredients
  • 1 Cup Basamti rice
  • 1 Cup Vegetables Mix of Carrots, beans, potato, peas, capsicum
  • 1 Tbsp Salt Adjust to taste
  • 1 Tbsp Pudina leaves Chopped
To Fry
  • 1 Tbsp Spices Cloves, Black cardamon, Elaichi, Cinnamom stick, Aniseeds
  • 2 Nos Onions Medium sized, Sliced
  • 2 Nos Bay leaf
  • 1 Tbsp Oil
To Grind
  • 1 Nos Tomato
  • 1 Inch Ginger Peeled
  • 1 Nos Garlic Pod Peeled
  • 1 Tsp Red chilli powder
  • 1 Tsp Turmeric powder
Instructions
  1. Choose basmati rice that is minimum 12 months old. Only older rice would make fine long grains and is flavorful. Soak rice at least for 30 minutes in warm water. Water level should be 1/2 inch above the rice to ensure uniform soaking. Soaking rice makes cooking fast and ensure long cooked grain.

  2. Cut vegetables in desired shape and keep ready.

  3. Drain water from the rice. Add rice along with salt and veggies into a cooker. Add 1 and 1/2 cup water to the rice.

  4. Grind the items given in the to grind list into smooth paste and add the paste also to the rice. Close the lid of the cooker and start cooking. I use electric rice cooker which enables me to add ingredients in between. If you are using pressure cooker, if you are direct cooking, cook for 3 minutes in high flame (till you get your first whistle). After than reduce flame to low and cook for another 9 minutes.  In a pressure cooker, if you are using inner vessel, direct cook for 5 minutes in high flame followed by 10 minutes of low flame cooking. Also remember to keep inner vessel covered. Otherwise it would start collecting water from the dripped lid.

  5. Meantime, in a kadai, add oil and fry dry spices along with bay leaf. Once you get aroma, add onion and cook in low flame till onion turns translucent.

  6. Once pressure releases from cooker, add the sauteed onions and mint leaves with spices to the cooked rice. Gently mix the contents when rice is hot.  Allow resting time of 10 minutes for the flavors to be fully incorporated.

Recipe Notes

 

In the picture below, I had not added pudina leaves as I did not have in stock. Adding pudina leaves gives it nice aroma. Instead of pudina (mint) leaves, you can add coriander leaves or green portion of spring onion. But each gives it different flavor and taste.

Vegetable rice-Step by Step with pictures

  1. Wash and soak basmathi rice in warm water keeping rice fully immersed for minimum of 30 minutes.
  2. Cut vegetables of your choice in shape. Thinly slice onions. Vegetable rice
  3. Cook basmathi rice along with vegetables with salt. Grind tomato, garlic, ginger and add them to the rice. Also add turmeric powder and chilli powder to the dish. Vegetable rice
  4. In a kadai, add the whole spices along with bay leaf and fry in oil Also fry onion till they turn translucent.
  5. Add onion and spice mix to the rice and cook well. Garnish with chopped mint leaves.

I had the vegetable rice with tomato thayir pachhadi. You can also have it with any other raita or simple fried appalam.
