Vegetable Idli-Colored Idli-Fusion Idli

Vegetable IdliVegetable Idli is a kids friendly dish made with colored vegetables such as Carrots and Beets. These idlis are as soft as the regular Idli with similar texture and taste.  Here is a very simple recipe. Do try and let me know your feedback.

Ingredients
Carrot Idli/Yellow Idli
  • 2 Nos Carrots Small, diced
  • 3 Laddle Idli batter
  • 1 Pinch Salt
Beet Idli/Red Idli
  • 1/4 Nos Beet Peeled and diced
  • 3 Laddle Idli Batter
  • 1 Pinch Salt
Instructions
Carrot Idli/Yellow Idli
  1. Cook the carrots with a sprinkle of water using Kadai/Microwave/Pressure cooker. Let the cooked carrots cool down. Blend them in a mixer along with a pinch of salt.

  2. Add the ground vegetables to the batter and mix well. Pour it in Idli mould and steam for 10 minutes.

Beet Idli/Red Idli
  1. Cook the Beet with a sprinkle of water using Kadai/Microwave/Pressure cooker. Let the cooked Beets cool down. Blend them in a mixer along with a pinch of salt.

  2. Add the ground vegetables to the batter and mix well. Pour it in Idli mould and steam for 10 minutes.

Recipe Notes

Notes:

  • Use the quantity of the vegetables as indicated.
  • Similarly Palak can be used to make green Idli. Cook palak and puree it in a mixer. Use 1 tsp puree per laddle of Idli batter. You would get Palak Idli.

  • Similarly cook the Beet with a sprinkle of water using Kadai/Microwave/Pressure cooker. Allow the cooked Beets cool down and then blend them in a mixer along with a pinch of salt. Add this paste/puree with Idli batter and pour into mould. Steam for 10 minutes as we do for regular idli.
  • Your vegetable Idlis are ready. These Idlis are as soft as the regular Idli with no difference in texture or taste. It is an easy way to add vegetables to one’s diet. Enjoy this with coconut chutney and Tiffin sambar.  Do try this and let me know your feedback.
