Some days, you wake upto making a dish that is ultra simple and has multiple use. I woke up late in the morning and to make up for time, I made this quirky, healthy yet tasty dish. It is a very simple Potato Capsicum Stirfry. I love the flavor of capsicum in any dish. It has distinct aroma and it is healthy too. I made this as side-dish for rasam for my inlaws and rolled this as chappati stuffings for my son’s lunch box.
I love stir-fires for their simplicity. Cooks in not time and more importantly does not follow any ritualistic recipe. You thaw ingredients of your choice with right spice, you are gonna done. Here is the simple recipe of Potato Capsicum Stirfry.
Potato Capsicum Stirfry

Potatoes – 3-4 medium sized
Capsicum – 1 large capsicum
Salt – 1/2 Tsp
Chilli powder – 1/2 Tsp
Oil – 1 tablespoon
Jeera – 1/4 Tsp
- Peel and Cube potatoes.Cube Capsicum also.
- And now boil potatoes till they are half done. I cooked them in pressure cooker directly for 2 whistle. You can cook them on kadai also.
- In a kadai, in low flame add a spoon oil and let Jeera splutter. Immediately add the cooked potato cubes along with salt and chilli powder. Cook covered for 2 min.
- Now add Capsicum to the almost cooked potatoes. Fry them together for 2 min in low flame till capsicum absorbes the spice and flavor.
Bingo, you are done with the dish.
To make a chappati stuffing, roll a chappati with the curry as stufffing. Top the Chappati with tomato sauce and pin the edges with set of cloves. My sons loved the stuffing. Do try this and let me know.
