Pav BhajiPav Bhaji is a famous Mumbai street food.  It is an Indian fusion food served where butter roasted bread is served with lavish spiced potato curry. Pav Bhaji is as vibrant as the city of Mumbai. Mumbai city symbolizes very open, bold and embracing culture.

Pav Bhaji according to Wiki, started as fast lunchtime dish for textile mill workers way back in 1850. Indians adoption to fusion food culture dates back to centuries. Since it was too difficult to make so many rotis for mill workers, someone decided to serve Indian style potato curry (Bhaji) with Portuguese style bread (called Pav).

Today it is one of the sought after food not only in India, but across the world. Personally I like Pav Bhaji because of the amount of vegetables that I can push to the kids. Here is the recipe to make the same.

Ingredients
  • Tablespoon 2 Oil
  • Nos 2 Onion Finely chopped
  • Nos 2 Tomato Finely chopped
  • Nos 1 Green Capsicum Finely chopped (Optional)
  • Nos 3 Potato Medium Sized
  • Tablespoon 2 Green peas Fresh or frozen
  • Nos 1 Carrot Finely chopped
  • Tsp 1 Ginger garlic paste
  • Tsp 1 Salt Adjust to taste
  • Tsp 1/4 Turmeric powder
  • Tsp 1/2 Red Chilli powder
  • Tsp 1/2 Coriander powrder Dhania powder
  • Tsp 1/2 Pav Bhaji Masala Any brand
  • Nos 2 Pav Buns Slit vertically
  • Tablespoon 2 Butter
Instructions
  1. To begin with keep the vegetables ready. Chop onions, carrot, tomato, capsicum finely and set aside. Peel skin of the potato with a peeler. Pressure cook potato, green peas and carrots together adding little water. Mash the pressured cooked items and keep ready.
  2. In a kadai, add oil. When oil is heated, add onions and saute till onion turns translucent. Followed by it, tomato and capsicum. Cook the ingredients till they are finely done and tomato turns mushy along with ginger garlic paste.
  3. It is now time to add the spices. Add coriander powder, salt, chilli powder, turmeric powder and Pav Bhaji masala. In a low flame, saute them till the spices are incorporated in the onion mix.
  4. To the onion mix, add the mashed potato mix. Dilute the mix by adding 1 glass of water and simmer. Let the ingredients incorporate the flavors and spice. Cook covered for about 10 min stirring occasionally. The bhaji should become a solid mass but should be moist.
  5. Parallely, keep the pav buns ready by slitting them. Bring a tawa to heat and add a generous blob of butter.
  6. Spread the buns with inner side of the slit bun facing the tawa. In a low flame, roast till the side is browned. Change the sides and roast all the sides. The side that is slit would require more time to roast than the otherside, that are already covered with a crust.
  7. Serve immediately with chopped or ringed onions.
Recipe Notes
a. You can squeeze a lime on top of the fully done Bhaji. This would make the dish tangy. b. In place of tomato, you can add dry mango powder (Amchoor powder) also. c. If you do not have proper pav bhaji masala, replace it with normal garam masala powder. d. It is bun roasted in butter makes the dish stand out. Do not be stingy else you will not get the taste. e. In some places they add a pinch of salt and chilli to the melted butter. That would make the dish more spicy,
