Paruppu Keerai KootuParuppu keerai Kootu is one of the very simple and easy to make Kootu. As I had told before, I had subscribed to a scheme whereby 5 bundles of organic green would be delivered to me every week. I therefore have greens available in fridge almost all the days. It also forces me to cook green everyday and consume. The fact that I had paid lot of money to the subscription scheme, adds pressure to me to do just for the money. Traditionally from the Tanjore region, we cook only Mulai Keerai, Arai keerai, Murunga keerai, Agathi and Manathakkali. Other green varieties such as Siru keerai, paruppu keerai, ponanganni etc do not grow in that region. Hence cooking paruppu keerai was new to me. A close friend of mine helps me a lot to cook these new greens.

Paruppu keerai is a tender green loaded with nutrition such as Vitamin C and Vitamin E. Paruppu keerai is sold with root on the shop. Only the leaves and tender portion of the stem are to be cooked. It is not a harm to include stem, but stem is loaded with fiber and not so palatable. Therefore use only the leaves as shown in the picture below. Taste-wise, it has a sweet taste and subtle aroma emanating sweetness of Dal and hence its name. Here is a simple recipe to cook Paruppu keerai kootu.

Ingredients
  • 1 Bunch Paruppu Keerai Cleaned and Leaves plucked
  • 3 Tbsp Moong dal Cooked and mashed
  • 1/2 Tsp Salt To taste
To grind
  • 2 Tbsp Coconut Shredded or pieces
  • 3 Nos Red Chilli
  • 1/2 Tsp Jeera/Cumin
To Temper
  • 1/2 Tsp Mustard
  • 1 Nos Red Chilli
  • 1/2 Tsp Jeera/Cumin
  • 1/2 Tsp Split Urad dal
  • 1 Tbsp Oil
Instructions
  1. Destem paruppu keerai and chop roughly. Add 2 Tbsp of water and cook covered in medium flame for 5 min in a kadai. Alternately you can use small pressure cook  (2 Ltrs) to cook the same for 1 whistle. Mash the keerai with a spatula well. I used to cook dal along with a pinch of turmeric in small pressure till it is cooked to mashing consistency. The next set, I usually add keerai and give it a whistle. Keerai this way gets cooked faster and this ensures that greens are not overcooked too.

  2. Add the items given under "To Grind" to a coarse paste.

  3. Add the cooked dal with cooked keerai along with the ground paste. Add salt to taste.

  4. Heat oil in a kadai and add oil. When oil is hot, add mustard. Wait for mustard to crack. Add Urad dal and red chilli. When dal turns golden, switch off and add jeera immediately. Adding Jeera in hot oil, after switching off flame helps to prevent Jeera from burning.  Add the tempered items to the kootu.
