Here is quick and healthy recipe of Cream of Sweet Corn Soup. There are two types of sweet corn soup that is popular in restaurants, Sweet corn clear soup and Cream of Soup Corn. Sweet corn clear soup is more appetizing where as Cream of Sweet corn soup is more filling.
I make this soup during the snack time and give it to kids. It is quite nutritious and filling. Sweet corn is loaded with fibre, trace minerals, anti oxidants and carbohydrates which is good for kids as it provides energy. I prefer buying fresh corn cobs that are available in the season, than preserved ones. In this season, fresh ones available a plenty. Do try this ultra simple soup and let me know your feedback.
- 2 Nos Fresh Sweet corn cob
- 1 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 Cup Milk
- 1 Pinch Basil Optional
If you are using fresh sweet corn, peel the corn and take out the kernels. To remove the kernels, here is a simple tip. Take a sharp knife and carefully slit one row of kernels deep with knife. The knife should have gone to the root of the kernels, Slightly tilt the knife (in the immersed position). You can now remove one row of kernels with hands. Once one row is removed, remaining ones can be done by hands very quickly.
Bring the kernels to boil. I cooked them in pressure cooker for 2 whistles or 10 minutes.
Cool down the cooked corn kernels a bit and then grind them in a mixer adding salt.
Strain the ground mixer by adding water as necessary. Top it with pepper and Basil and serve hot.
*Straining is optional. Young children do not like the small hair like fibre in the soup and hence straining. Store bought corn do not need straining. Actually after straining, the residue you find is very minuscule.
*Topping with Basil or any other Italian spice gives it rich flavor.
*Cream of Sweet Corn Soup gives good volume. I use two cobs to get 4 coups of thick Soup. Adjust consistency and spices to taste.
Cream of Sweet Corn Soup – Step by Step Instructions
*Peel the corn cob and take out the kernels.
*Pressure cook the corn kernels along with salt till tender.
*Cook down the cooked kernels to room temperature and grind them in a mixer. Dilute as necessary. Add pepper and Basil. Serve hot.
