Here is a recipe on Creme of Broccoli Soup. Broccoli is a rich source of anti oxidants and is very high in Vitamin C and Vitamin K. Sulfloraphane is a content in Broccoli which is believed to help in reducing free radicals.
Broccoli has a slightly bitter taste and I do not buy it often as it has small worms in it like in cauliflower. I was not too sure as how I can cook it excepting for stir fry. In this season, Broccoli is available abundantly from Ooty region. I am trying new dishes with broccoli and I made simple soup with Broccoli. It was very colorful and whole family enjoyed it. I am sharing a recipe on it below
- 1 Nos Broccoli
- 1 Nos Onion Chopped
- 1 Cup Milk
- 1 Tbsp Creme Optional
- 1 Tsp Salt Adjust to taste
- 1 Tbsp Pepper Adjust to taste
- 1 Pinch Basil/Oregano/Any other Italian seasoning
- 1 Tsp Oil Boiled
- 1 Cup water
Clean broccoli into florets and wash them in cold water.
In a pan, add oil and fry onions for 2 min. Add water and bring to boil. Once water boils, add the broccoli florets and cook for 5 minutes. I cook it in small pressure cooker for one whistle.
Take out and cool. Grind the onion and broccoli to fine paste in a mixer. you can use hand blender also to blend.
Add the boiled milk, salt, pepper and Italian spice to the soup. Dilute to consistency and serve hot. If you are using Creme, decorate it with fresh creme,
*Vegans can add a boiled potato in place of milk for making it creamy.
*Add a dash of full cream on top for extra creamy soup.
Broccoli Soup – Step by Step instructions
*Clean Broccoli into florets.
*In a kadai or pressure cooker base, add oil and fry onions. Add a cup of water and bring to boil. Once water reaches boiling consistency, add cleaned florets. *Pressure cook for 5 minutes or till one whistle.
*Grind by adding milk. Add Salt, pepper and herbs and creme. Dilute as required and serve.
